Vegan Dinner Salad with Lentils

The Salad Ingredients
- 1 head of romaine lettuce
- 2 carrots
- 3 to 4 stalks of celery
- 1 zucinni (optional)
- 1/3 each of red, orange, and yellow peppers (optional)
- spoonful of green olives (optional)
Wash lettuce, put through salad spinner, and tear into bite sized pieces. Wash and chop the other vegetables. Add to two large salad bowls.
The Dressing
- 1/2 of one lemon, squeezed, or 3 tbsp. apple cider vinegar
- 4 tbsp. extra virgin olive oil
- 2 cloves of garlic minced (optional)
- 1/2 tsp. coarse sea salt
- 1/2 tsp. freshly ground black pepper
Whisk all of the ingredients together until thickened. Pour over salads.
Makes two large and very satisfying salads.
